How to Prepare Delicious Lavender Cookies

Ingredients for about 30 cookies

140 g all-purpose flour

80 g potato starch

125 g butter

2 egg yolks

60 g powdered sugar

2–3 tablespoons dried lavender flowers
Method

In a large bowl, combine the cold butter cut into pieces with the flour and potato starch. Work quickly until the mixture takes on a sandy consistency.

Add the powdered sugar and the 2 egg yolks. Once the dough becomes smooth and firm, mix in the lavender flowers.

Cover with plastic wrap and let rest in the refrigerator for about 1 hour.

After chilling, divide the dough in half and shape each portion into a log.
Wrap them in plastic wrap and place in the freezer for 30 minutes. -
Remove the logs from the freezer and slice into 1 cm thick cookies.

Place the cookies on a baking sheet lined with parchment paper as you go.
Bake for about 10–12 minutes at 180°C (350°F) in a fan-assisted oven, preheated. -
Allow the cookies to cool completely before serving.
